Air Fried Steak Salad Nicoise Style

Tangy and savoury Air Fried Steak Salad Nicoise Style, perfect for a light and nutritious lunch or dinner.

Ingredients

  • 150g Chilled Australian Beef steak, any cut ¼ inch thickness 
  • 120g New potatoes, boiled, sliced thick, parboiled
  • 2 nos Eggs, soft boiled, sliced thick
  • 50g French beans/Haricot Verts, boiled
  • 20g Cherry tomatoes, quick seared
  • 20g Kalamata olives
  • 40g Baby gem Lettuce, washed
  • 2 cloves Garlic peeled, grated
  • 5g Fresh Italian parsley, picked
  • 2g Fresh thyme, picked
  • 2g Black pepper, crushed
  • 8g Dijon mustard
  • 1 tbsp Lemon juice
  • 15g Onion, red, sliced
  • 20ml Extra Virgin Olive Oil
  • 6g Sea salt flakes and pepper for seasoning

Method

  1. Set the Air Fryer to 180°C for 5-7 minutes.

  2. Place beef, potatoes onto a plate and rub with salt and pepper.

  3. Place the beef steak evenly into the air fryer basket, drizzle some olive oil. Turn on the heat. Air fry for 5-7 minutes on one side, take out, turn over steak and air fry for another 5-7 minutes. Remove cooked steak onto a plate and let steak rest for at least 10 minutes.

  4. Do the same process as the steak for the potatoes.

  5. In a mixing bowl, add in remaining olive oil, lemon juice, mustard, black pepper and mix evenly.

  6. Add in all other ingredients and toss to mix, add in the warmed potatoes and cherry tomatoes too. Season with salt and pepper.

  7. Pour onto a serving plate, place the halved soft boiled eggs.

  8. Slice the beef into 1 cm thickness and add to the salad. Sprinkle some sea salt and black pepper over. Serve immediately.

Dressing

  1. Mix 8g Dijon mustard, 1 tbsp lemon juice and 2 cloves of grated garlic in a bowl
  2. Drizzle in a little bit of olive oil & emulsify by stirring vigorously

  3. Add salt and pepper to taste
